Made this probably 30 times at this point and finally feel like I've got the ratios locked in enough to actually share it. This is a stovetop chili, no crockpot needed, done in about 90 minutes start to finish including simmer time.
Ingredients:
- 2 lbs ground beef (80/20)
- 1 lb ground Italian sausage (mild or hot depending on preference)
- 1 large yellow onion, diced
- 4 cloves garlic, minced
- 2 bell peppers, diced (one red, one green)
- 2 cans (15 oz each) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 2 cans (14.5 oz each) fire-roasted diced tomatoes
- 1 can (12 oz) tomato paste
- 2 cups beef broth
- 3 tbsp chili powder
- 1 tbsp ground cumin
- 1 tbsp smoked paprika
- 1 tsp cayenne (adjust to taste)
- 2 tsp dried oregano
- 1 tbsp brown sugar
- Salt and pepper to taste
- Optional: 1 bottle of dark beer (stout or porter) in place of some of the broth
Notes: Brown the beef and sausage together first, drain most but not all of the fat, sauté the onion/pepper/garlic in what's left. Add everything else and let it simmer uncovered for at least an hour, stirring occasionally, adding more broth if it gets too thick. The brown sugar is not optional in my opinion, it cuts the acidity from the tomatoes in a way that makes a bigger difference than you'd expect from one tablespoon.
Toppings are obviously personal preference but shredded cheddar, sour cream, diced red onion and a good cornbread on the side is the non-negotiable combo in my house. Anyone have their own "locked in" chili recipe they'd be willing to share, always looking to steal ideas for next batch. And you're welcome!
Always looking for a new different chili recipe thanks GenX Retro Gamer 👍
